Black Bean & Corn Salad

16-oz. can of black beans, drained and rinsed
1 lb. bag of frozen corn, thawed
1/4 c. red bell pepper, diced
1/4 c. green bell pepper, diced
1/8 c. green onions (scallions), sliced
1 c. tomatoes, fresh or canned
2 tsp. garlic, minced
1 Tbsp. fresh cilantro, chopped fine
1/4 c. red wine vinegar
1/4 c. olive oil
Dash of cumin
Corn tortilla chips or strips, crumbled
Lettuce, shredded

 

Combine all ingredients. Refrigerate until serving. Serve on a bed of shredded lettuce and top with crumbled tortilla chips. ¡Olé!
