Ham & Leek Soup | Taste of Garden Spot

Emily Enright, general manager of dining services, serves classic, hearty soup for a terrific menu to satisfy everyone’s tastebuds. This recipe serves six.

Ham, Potato & Leek Soup

1/8 c. butter
1 qt. chicken broth
2 heaping c. leeks, thinly sliced, white and light green parts only
2 med. russet potatoes, peeled and cut into small cubes
2 c. boneless ham, chopped
1/2 c. half & half
2 Tbsp. fresh chives, chopped
Salt and ground white pepper, to taste

In large saucepan, sauté leeks in butter for 5 minutes. Add broth, potatoes, salt and pepper. Bring to a boil over high heat. Reduce heat and simmer until potatoes are very tender. Puree mixture in blender (in two batches) until smooth. Return to saucepan. Stir in ham and half & half. Serve hot with a garnish of fresh chopped chives.
