Healthy Winter Recipes

Emily Enright (right), general manager of dining services, offers a selection of flavorful seasonal recipes to delight the most discriminating palates. If you lived at Garden Spot Village, you could eat like this every day!
Hearty Seven Bean Medley Soup
Canned beans, drained—1/4 c. each:
Dry beans, soaked overnight—1/4 c. (after soaking):
2 c. V-8 juice
2 c. chicken broth
1/4 c. green pepper, diced
1/4 c. canned tomatoes, diced
1/8 c. carrots, diced
1 tsp. basil
1 tsp. oregano
1/2 tsp. garlic, minced
Combine all ingredients and bring to a boil. Heat through. Serve piping hot with fresh bread.
Beet Salad with Balsamic Vinaigrette
1/2 lb. bacon, cooked and crumbled
1 head romaine lettuce, torn into bite-sized pieces
1 can beets, diced
1/4 red onion, sliced
2 Tbsp. parmesan cheese
3 Tbsp. balsamic vinaigrette dressing
Toss all ingredients except bacon in a bowl. Sprinkle salad with bacon and serve.
